Are you looking for a healthy way to get carbs in your diet? Need a healthy substitute for bread? This plantain tortilla recipe is one of my favorites so give them a try!

Plantains are a great source of dietary fiber, B complex vitamins, iron, magnesium AND they have more Vitamin A, Vitamin C and potassium than a regular banana. They are a great way to get those extra carbs you might be lacking for energy.

PLANTAIN TORTILLAS

3 Large or 4 small yellow plantains, about 2-2.5 pounds before peeling (I use the large plantains vs the small yellow ones. Mine are usually beginning to turn black which makes the wraps a little sweeter. If you do not want the sweeter flavor, then peel before they turn black)
2 egg whites
3 tablespoons of coconut oil, melted
1 freshly squeezed lime
1/2 teaspoon salt

1. Preheat oven to 350 degrees
2. Peel and chop your plantains. Then place in a food processor or blender.
3. Puree until somewhat smooth. Then add the melted coconut oil, egg whites, salt and lime juice.
4. Puree until completely smooth.
5. Drop about 2 tablespoons at a time onto a baking sheet lined with a lightly greased sheet of parchment paper, 2-4 per standard baking sheet.
6. Smooth into a circle with the bottom of a spoon, getting as thin as possible.
7. Bake for approximately 15 minutes or until dry to the touch and just starting to brown on the edges.
8. Makes approximately 8 tortillas.

Serving suggestion (as seen below): Top tortilla with greens (kale, spinach), chicken, avocado, cilantro and hot sauce.
