I love this recipe – got it from a friend and it has turned into one of my favorites. I no longer eat cheese; however, I like this meal as a “treat” for me when I am craving it. Great alternative for me when I want to order a pizza……you get the cheese cravings satisfied without all the bloating and stomach upset that greasy pizza will cause. (and all the guilt)

Salsa (may need to double recipe depending on how much chicken you prepare)

2 cups fresh strawberries, hulled and quartered
1/2 cup finely chopped sweet onion
lime juice (2 or 3 limes)
1/4 cup crumbled feta cheese
2 tsp olive oil
1 avocado, peeled and chopped
In medium bowl, combine strawberries, onion, avocado, lime juice, feta and olive oil. set aside.

Chicken Marinade

lime juice (3 or 4 limes)
1 cup of pineapple juice
orange juice (1 fresh squeezed)
1 or 2 cloves of garlic
2 or 3 teaspoons of chopped fresh cilantro (I love cilantro so I usually add more)
4 boneless skinless chicken breast halves
preheat grill or grill pan to medium. In large bowl, mix marinade, add chicken breasts and toss to coat. grill chicken until cooked through.
Top chicken with strawberry salsa. Best served with grilled vegetable kabobs (bell peppers, onions, and pineapple) over a bed of baked kale chips.
