1 head of cauliflower (about 4 cups)

4 tablespoons of coconut oil (or real butter made with olive oil)

Sea Salt

Black pepper

Chop cauliflower into roughly 2-3 inch pieces. Steam the cauliflower until it is fork-tender and place in a food processor. Add the oil or butter, sea salt, and black pepper.

Puree until smooth and creamy. If you want them even creamier, add a little unsweetened almond milk.

Surprise your family with these “Potatoes” and I am willing to bet they will call them your best mashed potatoes ever!!

Great with Pork, Steak, or Salmon! Add a green (kale, asparagus, broccoli, etc) and you have a great meal.

This portion feeds around 4 so will need to double the recipe for larger family.
